4 boneless chicken breasts
3 tbsp olive oil
1/4 c onion, diced
1 tbsp garlic, chopped
1/2 lbs mushrooms, sliced
3 tbsp flour
1/2 c Marsala wine
1 1/2 c chicken stock
salt and pepper to taste

Directions:
Directions:
Saute or grill chicken.

Add olive oil to heavy hot saucepan. Add onions, garlic, mushrooms and saute until mushrooms are tender. Add flour and cook about 1 min. then deglaze the pan with Marsala wine. Add chicken stock and cook until thick and flavors are blended.

Plate the chicken and top with a generious portion of the sauce.

This sauce can also be served over veal. If you use veal subsitute beef stock for the chicken stock.
