Ingredients:

3 Roma tomatoes or any tomato of choice diced
2 avocados diced
1/2 red onion chopped
15 oz can black beans drained
15 oz can blacked eye peas drained
1 1/2 cups frozen corn
1 bell pepper seeded and diced ( I like red and orange peppers over green)
1 jalapeno pepper seeded and diced
1/3 cups diced cilantro - Optional

Dressing:

1/2 cup olive oil
2 tbsp lime juice
2 tbsp red wine vinegar
1/2 tsp salt
1/2 tsp pepper
12 tsp garlic powder
1 tsp sugar





Directions:
Directions:
Mix all ingredients in a large bowl.

Mix dressing and pour over other ingredients. Toss well.

Keep in refrigerator until ready to serve. Stir before serving.

Good with Tortilla chips.
