Pour over beets:

2 cups beet water (boiling)
1 cup vinegar, cider
1 cup brown sugar
1 cup white sugar
1/2 teaspoon ground cloves
1/2 teaspoon all spice
1 teaspoon cinnamon
Juice of 1/2 lemon
1/2 teaspoon salt

Directions:
Directions:
Wash and boil beets (4-5lbs.) until tender. Large beets tend to be more woody. Beets no bigger than a baseball are better. Skin, peel, and quarter beets so they fit in the jars.

Have beet juice boiling and add remaining ingredients to make a syrup.

Put beets in jars, add syrup. Put on lids. Water bath for 30 minutes. Put on cooling rack.

* Canning practices have changed dramatically over the years. If you use this recipe, it would be best to research how long to water bath for your altitude.
