Meatballs

2 T. extra virgin olive oil
2 lbs. ground round
2 lbs. ground Italian sausage
1 ˝ c. breadcrumbs
2 eggs
1 tsp. salt
1 tsp. dried oregano
1 tsp. dried parsley
Salt and freshly ground black pepper to taste

In a large bowl mix all meatball ingredients together. Make meatballs, the size to your preference. Warm a large skillet, add the olive oil. Add the meatballs browning on all sides being careful not to burn. This may take a few batches. As you remove them put them aside in a bowl.
 

Sauce

2 T. extra virgin olive oil
1 med. onion, finely chopped
3 cloves garlic minced
˝ tsp. dried basil
1 (29-oz.) can crushed tomatoes, including the juice
1 (29-oz.) can diced tomatoes, including the juice
1 (29-oz.) can stewed tomatoes, including the juice
1 (14-oz.) can tomato sauce
1 (6-oz.) can tomato paste
2 T. sugar
1 T. dried parsley
1 T. dried oregano
Salt and freshly ground black pepper to taste
1 bottle of a nice Chianti, for drinking

In a large heavy bottom pot over med-high heat add the oil. Next add the onions, a dash of salt & sauté till translucent. Add the garlic for about 30 seconds. Then add the rest of the ingredients including the meatballs. (Italian sausage links can also be added, after browning) Bring to a boil, lower the flame to low and cook for three to four hours stirring often. Continue drinking the wine during this time. Serve over pasta with fresh grated parmesan cheese. Makes enough for a lot of people.
