1 large sweet potato (or two small) baked, mashed well and cooled
1/2 cup agave nectar or honey
1/2 cup sugar
1 egg
2 tsp. vanilla
6 tbsp. butter
1/2 tsp. baking soda
2 cups oats
1 cup raisins or chocolate chips
1 cup nuts (optional)

Directions:

Preheat oven to 350 degrees.
Grease cookie sheets.
Mix the first six ingredients together until well mixed (use an electric mixer if you have one).
Add in the baking soda and once again mix well, until all lumps are gone.
Slowly add in the oats, 1/2 cup at a time. Oats should be evenly dispersed in the dough.
Add in the raisins or chocolate chips and spoon onto a cookie sheet, forming small balls of dough.
Make sure the cookies are evenly distributed and bake for 10-12 minutes.
