6½ cups flour
1 lb butter, softened
½ pint cream
10 egg yolks (save whites)

Filling:
10 egg whites
1 box powdered sugar
3 lbs walnuts, ground fine

In a mixing bowl combine the butter and egg yolks and mix well. Add flour two cups at a time and add a little cream until all is combined. Roll into little balls about ½ the size of a walnut. Make one layer on cookie sheet, cover with waxed paper. Add more cookies on top, repeat until all batter is used. Refrigerate doughballs overnight. Next day roll out each ball in powdered sugar until very thin. Spread a little nut filling on the cookie and then roll into a log shape. Place on greased cookie sheet with open side down. Bake at 350º for 10 minutes or until golden brown. When completely cool shake with powdered sugar.

Filling:
In a mixing bowl beat egg whites until stiff. Add powered sugar and mix well. Fold in nuts.
