3 c. (350g) all purpose flour
1/2 c. (50g) cocoa powder
2 tsp cornstarch
2 tsp baking powder
1 tsp kosher salt
1 c butter at room temp
2 eggs
1 c brown sugar
1/2 c white sugar
1.5 Tbsp vanilla
1 Tbsp ground espresso or coffee
1 Tbsp light corn syrup
1 c chocolate chips
Peanut butter (as needed)
Reeces Peanut butter cup (preferably the small ones)

Preheat oven to 375º
Whisk together your flour, cocoa powder, baking powder, corn starch and salt.

In separate mixing bowl on medium-high speed, beat your butter, eggs, both sugars, coffee grinds, corn syrup, vanilla until light and fluffy.
Add your dry ingredients 1 cup at a time on low speed until incorporated.

Feel your dough. If it's too wet and sticky, add more flour 1/8 c. at a time. If it's too dry and crumbly, add a splash of milk, your dough should be soft like play-doh but not stick to your fingers. Mix in chocolate chips.

Weigh your dough in 5.7 oz dough balls, then cut each ball in half.
In one half of your dough ball, use your thumb to create a well & fill heaping tablespoon of peanut butter.
Sandwich both ball halves together and rolll it back in to a ball.

Bake 9-10 minutes. Top with Reese's PB cup as soon as they come out of the oven.

*Use parchment paper for best results
*No need to chill before baking
*Rotate Reese's as you press them onto the hot cookie
*Let cookies cool down over night or 1 hour in the fridge
