4 avocados
2 lemons, juiced
1 white onion, finely chopped
1 jalapeño, seeded (or not) and finely chopped
6 tablespoons cilantro, roughly chopped
1/2 tsp black pepper, freshly ground
1 1/2 tsp salt

Directions:
Cut the avocados in half with a sharp knife, separate the halves, and carefully remove the pit with a spoon or knife. Using the spoon, scrape the avocado pulp from the skin into a large mixing bowl.

Using a fork, roughly mash the avocados together with the lemon juice, taking care not to mash too aggressively — the texture of the guacamole should be somewhat chunky. Gently fold in the onion, jalapeño, cilantro, black pepper and salt. Cover the surface of the guacamole plastic wrap and refrigerate until you're ready to serve.

We always did this without a recipe. When searching for one I discovered the closest to Grammy's was Laura Bush's. Except the First Lady used shallots and the Best Lady used white onion.
