2 eggs
1 small onion 1 tsp salt
½ tsp baking powder
½ tsp baking soda
3 Tbsp all-purpose flour
twist of cracked pepper
⅓ c canola oil

For serving.

Pre-heat oven to º200 f
Peel the potatoes and onion.
Using a box grater fine grate, the potatoes and onions add all the other ingredients except the oil, or simply pop all of the ingredients into a food processor or blender.
blend well to make a light batter. pour ⅓ c portions of the batter onto well oiled.
preheated crepe pans. making 2 at a time allowing them to hold in the warm oven.
until ready to serve
this makes approx. 12 medium pancakes. Serve warm with condiments.

Who knew? Back when I was scaping my knuckles on an old box grater and making a batch of potato pancakes to feed a big hungry family. ( this was a lot of pancakes 7 X the recipe) that one day this chore would be so easy with the new devices available today.

It is also interesting to see as My culinary knowledge has expanded, how it seems every culture has some kind of potato pancake on its menu.
The one I am sharing was handed down to my mother from her mother from the French culture (Grandma Desjardins).
I want to thank Bernadine Morris who was our friend and Neighbour on the farm, for bringing this recipe back to my attention, and for also keeping the old tried and true recipes alive.
