Notes: Who knew? Back when I was scaping my knuckles on an old box grater and making a batch of potato pancakes to feed a big hungry family. ( this was a lot of pancakes 7 X the recipe) that one day this chore would be so easy with the new devices available today.
It is also interesting to see as My culinary knowledge has expanded, how it seems every culture has some kind of potato pancake on its menu. The one I am sharing was handed down to my mother from her mother from the French culture (Grandma Desjardins). I want to thank Bernadine Morris who was our friend and Neighbour on the farm, for bringing this recipe back to my attention, and for also keeping the old tried and true recipes alive.
