1 c. Shortening
1 c. Sugar
1 c. Brown sugar
2 Eggs
1 c. Crushed & drained pineapple
1 T. Vanilla
2 tsp. Baking powder
½ tsp. Baking soda
4 c. Flour
1 c. Nuts

In a large bowl, cream together shortening, granulated sugar and brown sugar until light and fluffy. Add eggs, one at a time, beating until combined. Add pineapple, vanilla, baking powder and baking soda and mix until combined. Gradually add flour, stirring until combined. Stir in chopped nuts. Roll the dough into 1” balls and place them on greased baking sheet. Bake at 350ºF for 12-15 minutes, or until the cookies are golden brown.
