2 Lbs ground beef
1 small onion, diced
1/2 bell pepper, diced
2 stalks celery, diced
3 cloves garlic, minced
1 can Rotel, with juice
1 sleeve saltine cracker crumbs
2 eggs
1 tsp dried basil
1 tbsp dried parsley
Salt and pepper

1 small can tomato paste
1 can tomato soup, diluted with 1/2 can beef broth

Directions:

Preheat oven to 350F.

In a Dutch oven, mix first ten ingredients using your hands. Fry a small piece if you need to test for seasoning. Form into two semi-circular loaves against pan sides, leaving a channel in the middle.

"Ice" the meat loaf tops with tomato paste. Pour the diluted soup over the meat loaves and into the center channel. Bake covered for one hour until done.

Serve with mashed potatoes or rice, or as a sandwich.
