1 pkg of chocolate chips
3/4 c. plus 2 T. gf flour blend
1/4 c. cocoa powder
1/2 t. baking soda
1/2 t. salt
1/4 t. xanthan gum
3/4 c. brown sugar
1/4 c. sugar
2 eggs
5 T. olive oil
2 T. butter, melted & cooled
1 t. vanilla
1/2 t. instant espresso powder, optional
1 1/2 c. chocolate chips

Directions:

Microwave the chocolate chips until melted. Mix remaining ingredients. Cover bowl and let rest for 30 minutes (Dough will sticky and soft).
Roll in powdered sugar & bake at 350' for 12-14 minutes.
