Grandma Irene's Cabbage Rolls Recipe

1 - 6 to 7 lbs cabbage
1 cup of vinegar added to a pot of boiling water (to cook the cabbage)
1 ground pork
1 ground beef
1 medium size onions diced small
1 pound of bacon for on top of the cabbage rolls
1/2 cup of bacon drippings (that you have been saving)
2 cups of converted long grain rice cooked
1 Tbsp. salt
1 can tomatoe jucie + 1 small can of tomatoe soup+1/4 cup of vinegar (combined and then poured on top of the cabbage rolls).

Directions:
Cook the cabbage whole in the boiling water for about 2 hours.
If you are growing your own and going to freeze it (core it first)thaw it and skip the boiling step.

Fry the ground beef and pork and allow it to cool. Then mix well breaking up any large clumps. Cook the rice according to pkg directions, and allow to cool.

Fry the onions in a little bit of vegetable oil.

In a large roast pan, combine the meat, rice and onions and mix well.

Add salt and pepper to taste.

Add 1 cup of bacon drippings (liquify it in the microwave and drizzle over

Roll the cabbages (see photos at end of book). Lay in a roast pan. Top with tomato juice mixture and the bacon.

Bake in 350 degree oven, x 2 -1/2 hours.
