Preheat the oven to 350 degrees

1/2 cup margarine softened
1/3 cup brown sugar
1/3 cup white sugar
1 large egg + 1 egg yolk
1-1/4 cup white flour
3/4 tsp. baking soda
1 cup rolled oats
1/2 cup unsweetened coconut flakes
1/3 cup chopped dried cranberries

Directions:
Directions:
With a mixer, mix the white sugar, brown sugar and margarine x 2 minutes.

Add the egg + the egg yolk and vanilla. Mix well.

Add the flour, baking soda, and oats. Combine well.

Stir in the coconut flakes.

Bake for 10 minutes on parchment paper.
