1 egg yolk
1/2 cup butter
1/4 cup powdered sugar
1/2 tbsp lemon zest
1 tbsp pure lemon juice
1/2 teasp salt
1 1/4 cups flour
1/2 cup lemon curd

Directions:
prehear oven to 350

separate the egg yolk from white set aside

cream butter conf sugar together. beat until smooth and pale. add the egg yolk lemon juice salt and zest beat for one minute.

add flour beat until moist clumps form

use a tablespoon measure spoon to portion our the balls then use hands to roll each ball place on cookie sheet.

make thumprint in each cookie. the dough can crack a little it is ok

cook for 18 minutes

remove from oven put 1/2 teasp of lemon curd into cookie and return to oven for 2 minutes more to set curd.

remove from oven lightly dust with conf sugar
