2 ¼ c. flour
1 tsp pumpkin pie spice
½ tsp baking soda
2 sticks of butter
1 ½ c. dark brown sugar
1 c. unsweetened pumpkin puree (Libby's)
2 eggs
1 Tbsp vanilla extract
2 packages of semi-sweet chocolate chips

Directions:

Preheat oven to 300º.

In a small bowl, combine flour, pumpkin pie spice, and baking soda. With a mixer, cream butter, and sugar. Add pumpkin, egg, and vanilla. Then add the flour mixture. Fold in the chocolate chips.

Drop by tablespoons onto an ungreased cookie sheet. Bake for 20 to 22 minutes or until set. Transfer to racks to cool. Makes about 3 dozen cookies.
