1 Cup of Rice
1 Cup of Water
2 Qts. + 1 ¾ Cups Milk

2 Tsp. Vanilla

1. Mix 1 cup of sugar, 1 cup of rice, 1 cup of water, 2 quarts plus ¼ cup of milk in a large saucepan over medium high heat. Bring to a boil and boil for 50 minutes, stirring continuously.
2. While this is boiling separate 4 eggs. Add ½ cup of sugar to the whites, a pinch of salt and beat into a meringue. Beat egg yolks and add 1 ½ cups of milk.
3. When 50 minutes have passed add the egg yolk mixture slowly to the hot mixture and bring back to a boil, stirring often. Cook for about 2 minutes, add 2 tsp. vanilla, fold in the meringue and turn off the heat. Add cinnamon if you like.
