1 Lb. Lean Chop Meat (a little more is ok)
3 Slices Firm Bread (whole wheat is good)
2 Cloves Garlic (minced)
¼ Cup Parmesan Cheese
1 Large Egg
1 ½ Tbsp. Parsley Flakes
Salt and Pepper to Taste

Put meat in bowl large enough to mix in. Put water in small bowl and wet the bread slices thoroughly, remove the top crust and gently squeeze most of the water out of the bread. Add it to the meat and add all the other ingredients. Mix thoroughly with your hands and mix until the bread is not visible. The mixture should be soft, not dry. Add Italian bread crumbs if you need a thicker consistency. When you think it is mixed well, shape into meatballs and fry in oil, until browned on all sides. Do not attempt to turn them unless you see the edges getting brown, or the meatballs will stick and break. If making with marinara sauce then simmer in a marinara sauce for at least 30 minutes (to get the flavor into the meatballs) This will make 12 or more meatballs depending on the size.

If you are serving the meatballs separately on the side you will need to double this recipe. But if you intend to break them into pasta, then this will be enough.
