8 c cored unpeeled diced pears
Fruit Fresh (vitamin C powder) optional
1 c sugar
1/2 tsp ginger
1/4 tsp cardamom (optional)
1/2 tsp vanilla (optional)
1/4 tsp almond extract (optional)

PANCAKE
4 eggs
2 Tbsp sugar
2 Tbsp melted butter or oil
1 c milk
1 Tbsp vinegar
1 c oatmeal
1/2 c milk (to soak oatmeal)
1 1/4 c flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp ginger
1/8 tsp cardamom (optional)
1/4 tsp allspice (optional)

Directions:
Directions:
Heat filling ingredients in large skillet or saucepan until just tender. The sugar will form a syrup with the pear juice. Pour pears and syrup in largest oval corning casserole or 11x7 baking pan or two smaller casseroles.

Mix oatmeal with 1/2 c milk and let sit for a few minutes to soak.
Mix 1 c milk with vinegar, microwave 30 seconds, set aside.
In a separate bowl, combine dry ingredients in a with a whisk, set aside.
Mix eggs, sugar, melted butter and flavorings in a large bowl with a mixer (or by hand with a whisk). Add dry ingredients, milk, and oatmeal, stir until just mixed. Pour over pears. Bake at 375º for about 30 minutes (test to ensure center of pancake is set).
