1 cup butter (or ½ cup butter and ½ cup shortening)
2 cup sugar
3 cup cake flour, sifted
3 teaspoons baking soda
½ teaspoon salt
4 eggs
1 cup milk
1½ teaspoon vanilla
Seven Minute Frosting I (see Frostings)
fresh coconut, grated

Directions:

1. Preheat oven to 350°F.
2. Sift together flour, baking soda, and salt. Set aside.
3. Cream butter and sugar very well until light and fluffy. Add one egg at a time, beating after each one.
4. Add flour mixture to butter mixture alternately with the milk. (start with flour and end with flour). Mix in vanilla.
5. Pour into three cake pans lined with wax paper on bottom and sides Bake 25 to 30 minutes at 350°F. Cool to room temperature.
6. Sprinkle some fresh coconut milk on each layer before you add frosting and coconut.
7. Stack three layers, frost top and sides.

1. Use a phillips head screw driver and hammer to puncture holes in a coconut.
2. Drain the coconut milk into a glass.
3. Crack the coconut with the hammer.
4. Use a paring knife to remove the peel off the brown part.
5. Wash and dry the coconut meat.
6. Then grate it in the blender; it takes only a minute.

Coconut freezes beautifully. This way you can get your coconut ready a few days before you make your cake.
