½ C Unsalted butter, softened
1 C Light brown sugar
3 Tbsp Granulated sugar
1 Egg
2 tsp Vanilla
½ tsp Baking soda
½ tsp Baking powder
½ tsp Salt
1¾ C Flour
1½ tsp Instant coffee, slightly crushed
8 oz Semi-sweet chocolate chips

Pre-heat Oven to 375ºF Greased Cookie Sheet

Using a mixer, cream the butter with the sugars until light and fluffy. Beat in the egg and vanilla. Combine the dry ingredients and beat into the butter mixture. Stir in the chocolate chips.
Drop by large spoonsful onto prepared cookie sheet. Bake for 8 to 10 minutes, or 10 to 12 minutes for a crispier cookie.
