1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
1 cup all-purpose flour
1/2 cup vegetable shortening
1/2 cup light brown sugar, firmly packed
1/2 cup granulated sugar
1 egg, lightly beaten
1 tsp vanilla extract
2 tsp water
1 1/2 cups rolled oats
1 cup toffee baking bits

Directions:

Heat oven to 350 degrees.

Stir together the dry ingredients except for the oats and toffee; set aside. Cream shortening and sugars together. Add the egg, vanilla extract, and water and mix well until blended. Add the flour mixture until just combined. Stir in the oats and toffee bits.

Cover cookie sheets with parchment paper and place rounded balls of dough about 3" apart on cookie sheets. Bake for 10 to 12 minutes.

Allow to cool before removing from cookie sheets.
