Lemon Caper Chicken Recipe

Prep 5 min (If all of you are working together) 10 mins if working alone
Cook time 20 min... usually takes me about 45

2 tsp Italian seasoning
2 tsp freshly cracked black pepper
1 tsp salt
1 tsp garlic powder

2 T olive oil
4 large boneless/skinless chicken breasts sliced in half lengthwise
4 T butter
2 T dry sherry (need extra if cooking zucchini noodles)
Juice of 1 lemon
1 garlic clove, minced
1/2 cup heavy whipping cream
6 Ts drained capers
1 T minced fresh thyme (optional) or sage
black pepper and salt to taste

Directions:
Directions:
1) In a small bowl, combine Italian seasoning, black pepper, salt and garlic powder. Lightly season all sides of chicken with seasoning mixture
2) In a large skillet over medium - high heat, add olive oil. Add chicken and let cook for three minutes. Flip and cook until golden brown and cooked through, about 2-3 more minutes.
3) When chicken is done cooking, transfer to a deep plate and cover with foil to keep warm.
4) Add butter, sherry and lemon juice to skillet and scrape up any chicken bits. Add garlic and cook for 30 seconds.
5) Add whipping cream and bring to a simmer, cook 2-3 minutes whisking constantly, until it can lightly coat the back of a spoon * Not sure that has ever happened when i have cooked this so just cook for 3 minutes and call it good! *

6)Remove from heat and add capers, thyme and salt and pepper to taste. Pour over chicken and serve (I like to slice up my chicken and add it back to the sauce to reheat the chicken.
Great served over zucchini noodles. Kenz cooks those in butter, fresh garlic minced and adds a little cooking sherry to give it some good flavor and moisture.

This is aunt jenny's favorite meal so plan to make it for her whenever you want to see her smile :)

I usually like to double the sauce too because i mean who doesn't like extra sauce that is made with cream, butter and garlic, RIGHT??????
