1½ lbs salmon fillet
1 tsp salt
1/8 tsp pepper

MERINGUE MIXTURE:
2 - 3 beaten egg whites
1/4 cup mayo
2 Tbls sweet pickle relish
3 Tbls chopped onion
1 Tbls chopped parsley
1/4 tsp salt

Directions:
Directions:
1) Preheat oven to 425º. Remove skin from salmon and sprinkle with salt and pepper. Bake in the oven for 10 minutes in a greased pan.
2) Meanwhile, combine in a bowl: mayo, sweet pickle relish, chopped onion and parsley, and salt.
3) Beat 2-3 egg whites until stiff. Fold in the above mixture. Cover the salmon with the meringue mixture. Return salmon to oven.
4) Bake 10-12 minutes.
