Dough

6 cups of all purpose unbleached flour
8 eggs
1 teaspoon of salt
Kitchenaid mixer

Add together the flour, eggs, and salt into the mixer. Mix together on low speed until dough forms. Add 1 more egg and mix dough again if needed. Take dough out of mixer and put on table. Knead the dough with a little flour until smooth. Put dough under bowl and let sit for at least 15 minutes.
 

Filling

6 pounds of ricotta (Sorrento original whole milk)
3-4 eggs
1 Palm full of parsley
1-2 teaspoons of pepper
2 handfuls of Parmesan cheese
1 teaspoon of salt
Put ricotta in a large bowl. Take a paper towel and dab on top to get rid of excess water. Start mixing the rest of the ingredients together. If made early, refrigerate until you are ready to make raviolis.

Making the ravioli

Ravioli Dough

Pasta maker roller

Directions:
Directions:
Roll out dough via pasta maker, then fold and roll out again and again until dough is smooth.
Fold the sheet of dough so it is a full sheet when rolled out. Scoop one tablespoon of ricotta mixture and place on dough. Space the mixture every 2 fingers apart. Fold over the dough and press down on edges. Then press the dough with your hands to form shape of ravioli. Use a double-sided rolling cutter to seal the edge of the ravioli. Then use the cutter to separate the shapes of the ravioli.

Boil the raviolis in water until they float to the top. Feel the edges to make sure they are cooked fully. Add gravy into a bowl and serve.
