1 stick plus 2 and 2/3 tablespoons butter
3/4 cup firmly packed brown sugar
1 tablespoon cinnamon
2 teaspoons ginger
1 1/2 teaspoons ground cloves
1 teaspoon baking soda
1/4 cup boiling water
2 1/2 cups flour

Directions:
Directions:
In a large bowl cream the butter and brown sugar. Add the spices. In a small separate bowl, combine the baking soda and boiling water, then add to the dough, along with the flour. Mix to make a stiff dough. If needed, add more water, one tablespoon at a time. Chill for 30 minutes or overnight. When ready to roll out, turn oven to 375.
Line baking sheets with parchment paper.
Roll dough to only 1/8 inch thick. Cut with cookie cutters of your choice and place on baking sheets. Bake 7-10 minutes.

Icing: mix 1 egg white, 3 cups powdered sugar, and 1 teaspoon almond extract. Using a pastry bag with a fine tip, decorate the cooled cookies as desired.
