14 bacon slices, cut in half
1 (12-ounce) package mini potato and Cheddar pierogies
1/4 cup light brown sugar
Salt, pepper and paprika to taste

Preheat oven to 400 degrees F. Bring a large pot of water to boil. Add pierogies and boil for 3 minutes, stirring occasionally. Remove pierogies from water and let cool, about 5 minutes. Coat a rimmed baking sheet, lined with foil, with cooking spray. Sprinkle pierogies with salt, pepper and paprika. Wrap bacon around center of each pierogi and place seam side down on prepared pan. Sprinkle evenly with brown sugar. Bake 18 to 20 minutes, or until bacon is crisp. Makes about 24.

Sometimes, I’ll add a bit of chili powder to the brown sugar to take this recipe up a notch.
