1 cup butter flavored shortening
1 cup firmly packed dark brown sugar
1 egg
1/2 cup honey
1/4 cup water
1/4 cup sugar
1 1/2 tsp vanilla
1 1/4 cup all purpose flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
3 cups old fashioned oatmeal
1 cup raisins
1/2 cup coarsely chopped peans

Directions:

Heat oven to 350 degrees, spray baking pan lightly with cooking spray or grease lightly with butter flavored shortening.
Combine shortening, brown sugar, egg, honey, water, sugar and vanilla in a large bowl. beat a low speed mixer until blended. Increase speed to medium speed and beat until light and creamy.
Sift flour, cinnamon, baking soda and salt together twice. Add the flour mixture in small amounts into the cream mixture at low speed making sure well mixed before adding more. Increase speed to medium beat until well blended. Stir in the oatmeal by spoon. Mix until well blended stir in raisins and nuts. Drop heaping tablespoons onto baking sheet.
Bake at 350 for 12 to 14 minutes or until golden brown. Cool 3 to 5 minutes before removing to a large plate.
