Banana Drop Cookies Recipe

2 1/4 c. flour
1 c. sugar
2 t. baking powder
1/4 t. baking soda
3/4 t. salt
2/3 c. shortening
2 eggs
1 c. mashed bananas ( 2-3 )
1 t. vanilla
1/4 t. cinnamon
1 T. sugar

Sift together flour, sugar, baking powder, soda & salt into mixing bowl. Add eggs, bananas and vanilla, beat until blended. Drop by teaspoonful onto ungreased cookie sheet. Sprinkle with mixture of cinnamon & 1 T. sugar. Bake at 400 for 12 minutes. Makes 3 dozen cookies
VARIATION: fold 6 oz of semi-sweet or milk chocolate pieces into batter
