Grandma's Macaroni & Cheese Recipe

4 Tbsp. of butter
4 Tbsp. of flour
12 oz. package of tricolor rotini cooked until tender.
8 0z. Cheddar Cheese, grated (Cabot's Extra Sharp or Seriously Sharp™ tastes
best) more cheese to taste works well.
2 C whole milk
1 Tbsp. of Prepared Horseradish
Salt and Pepper to taste.

Bread Crumb Topping
1 C dried breadcrumbs
3 Tbsp Butter

Cook rotini and drain well. This can be done while the cheese mixture is being prepared. In a large saucepan, melt butter. Add flour and whisk until bubbly and smooth. Slowly add milk, cooking rapidly, stirring constantly until sauce thickens. Cook 1-2 minutes longer. Remove from heat, add cheese and whisk constantly until the cheese has blended and melted. Blend in Horseradish. Blend macaroni into this mixture. Turn into a 9" X 12" baking dish.

Bread Crumb Topping
Melt butter in Microwave, mix in 1 cup of dried breadcrumbs. Sprinkle this mixture over the top of the Mac & cheese dish.

Bake at 350 º 15-20 minutes until the top has reached the desired brownness and the center is thoroughly heated.
