2 c. butter, softened
1 c. sugar
2 large egg yolks, room temperature
2 tsp. vanilla extract
1 tsp. red paste food coloring
4 c. all-purpose flour
4 tbsp. baking cocoa
1 c. coarse sugar
FILLING
8 oz. cream cheese, softened
½ c. sugar
2 large egg white, room temperature
1 tsp. vanilla extract
1 tsp. salt

Preheat oven to 300°. In a large bowl, cream the butter and sugar together until light and fluffy. Beat in the egg yolk, vanilla and red food coloring. In another bowl, whisk together flour and cocoa; gradually beat into the creamed mixture. Roll the dough into 1-in. balls; roll in coarse sugar. Place 2 in. apart on parchment-lined baking sheets. Press a deep indentation in center of each with the back of a 1/2-tsp.measure.
Bake 10 minutes.
For filling, beat the cream cheese, sugar, egg white, vanilla and salt until blended. Reshape indentations in baked cookies as needed. Fill each with 1 tsp. filling. Bake until filling is set,10-12 minutes longer. Remove cookies to wire racks to cool completely.
