Frozen crispy chicken strips (I use Tyson)
Cooked rice

Sauce:
1/2 cup water
1/2 cup pineapple juice
1 orange (for 2 tbsp orange juice and 1 tbsp zest)
1/4 cup lemon juice
1/3 cup rice or regular vinegar
2-1/2 tbsp soy sauce
1 cup brown sugar (don't pack)
1 tsp minced fresh ginger root
1/2 tsp minced garlic
2 tbsp chopped green onion
1/4 tsp red pepper flakes

2 tbsp cornstarch
2 tbsp water

Directions:
Directions:
Cook the chicken according to the package and when done, cut into bite-size pieces. To make the sauce, pour the water, pineapple juice, orange juice, vinegar, soy sauce, orange zest, brown sugar, ginger, garlic, green onion and red pepper flakes into a sauce pan. I add a couple of drops of sesame oil for a nutty flavor. Bring to a boil. Mix the cornstarch and 2 tablespoons water into a paste and add immediately to the sauce. Reduce heat to medium low for about 5 minutes until the sauce thickens. Add the chicken pieces. Serve over rice.
