Ingredients: 2 cups unsalted butter at room temperature 1 ½ cups powdered sugar 2 Tblsps. vanilla 4 cups flour 2 tsps. baking powder

Directions:Cream butter and sugar together until fluffy. I find it's best to use the paddle attachment of your stand mixer. Add vanilla and beat until combined. In separate bowl, combine flour and baking powder and whisk together. With mixer on low speed, slowly add flour mixture to butter mixture and mix until just incorporated. Do not over-beat. Form dough into 2 balls, flatten out and place in plastic wrap. Refrigerate for 30 minutes. Preheat oven to 350º. Roll out chilled dough to whatever thickness you like. I use dowel rods to place on each side of the dough as I'm rolling it out to achieve universal thickness. I vary my cookies from ⅜" thick to ½" but it's all up to you. Bake 10-12 minutes. I've cut out and baked the cookies well ahead of time and put them in Tupperware (separate layers with wax paper) and they keep in the freezer for months. |
