Soup
1lb. Navy Beans or Great Northern Beans
2 Ham hocks or leftover ham bone with meat
½ Sweet Onion, Chopped
1 cup Carrot finely chopped.
Water to cover beans, add more as needed.
Salt & Pepper to taste

Dumplings
4 Eggs
½ cup all-purpose flour
Salt & pepper to taste
Optional - Garlic powder or Sage to taste

Directions:

Soak the beans overnight per package directions, drain, rinse.
In large soup pot add the beans, ham hocks and cover with water. Bring to boil then cover and simmer for an hour. Remove ham hocks or bone and cut the meat off, add back to pot. Add onion and carrots and more water if needed. Cook for 30 minutes or until beans are cooked.

Make Dumplings
Scramble eggs and gradually add flour, salt & pepper with fork until pulls away from sides of bowl. Bring soup to a boil and using a teaspoon, scoop dumpling mix and drop into soup. Cover pot and cook for 10 minutes. Dumplings will float on top and almost double in size.

Number of servings:4. Prep time: 3 hours.
