1 lbs (2 cups) shortening
2 1/4 cups sugar
1 teaspoon vanilla extract
4 eggs
6 cups sifted flour
1 1/2 teaspoon salt
2 teaspoons baking powder

extras chocolate, spices, nuts cherries, coconut, etc.

Directions:
Directions:
Cream shortening with sugar and vanilla until light and fluffy. Add unbeaten eggs one at a time, beating thoroughly after each addition. Add remaining ingredients mixing well until smooth.
Divide dough into thirds. Use one part of dough for plain cookies. Make spice cookies with second part - adding 1 1/2 teaspoons cinnamon, 1/2 teaspoon ginger, and 1/4 teaspoon each cloves and nutmeg. Add 2 squares of melted chocolate to the third part and mix well.

Can bake as drop cookies - on greased hot oven 400º for 10 minutes.
Cookie cutter cookies- form dough into rolled logs around 2" round. Wrap well in waxed paper and plastic wrap. Refrigerate- then can cut into small rounds. add nuts, candied cherries, coconut, citron for decorations. Also can put into cookie press.

Note: If you like peanut butter cookies, add 6 tablespoons peanut butter to one third of the dough. If you like a softer cookie, add 1/4 cup of marmalade to 1/3 of dough, for thumb print cookies. For richer chocolate chip or Butterscotch chip cookie add 1 small bag of chips to 1/3 of dough.

Try making chocolate vanilla Pinwheel cookies- take 1/3 of dough divide in half. Add 1 square of melted chocolate and leave other 1/2 plain. Chill dough then roll out into a rectangle 1/4" thick. Place chocolate layer on top of vanilla layer and roll up together from the long end. Wrap in waxed paper and chill thoroughly in fridge. while chilled slice through roll as thin as possible and bake as above.
