For the Cake:

16 ounces fresh strawberries
1 (16.5-ounce) white cake mix
3 eggs
¾ cup vegetable oil
1 (3-ounce) package strawberry flavored instant gelatin (Jello) *reserve 1 tsp for icing!

For the Icing:

¼ cup butter, at room temperature
4 ounces cream cheese
1 ½ tsp vanilla extract
3 cups powdered sugar
1 tsp strawberry instant gelatin (reserved from making cake)
2 tbsp strawberry puree

For the cake:
1. Wash and hull strawberries then gently puree in food processor or blender. You want them to be well chopped but not all liquid. You will need 1 cup of puree for cake and 2 tbsp for the icing. This amount of strawberries should make enough but if it doesn't simply add water to get to the 1 cup plus two tablespoons.
2. Preheat oven to 350º and spray 9x13 baking pan with nonstick cooking spray.
3. In large mixing bowl, mix together cake mix, eggs and vegetable oil until well combined. Set aside 1 teaspoon of gelatin for icing, then add remainder to batter along with 1 cup of strawberry puree. Mix well.
4. Pour mix into the prepared pan. Bake for 30-35 minutes until a toothpick inserted into center comes out clean. Allow to cool completely before icing.

For the icing:
1. In large mixing bowl, cream together the butter and cream cheese until well combined and all lumps all gone. Add vanilla, then slowly add 3 cups of powdered sugar separately mixing after each addition. Add 2 tablespoons of the strawberry puree and the reserved 1 teaspoon of the reserved strawberry gelatin and mix well. Add more powdered sugar if the icing is too thin. Spread over cooled cake. Store in refrigerator.

My Dad loved his Granny Micklem's Strawberry cake and always wants it for his birthday. Carter and I love it too. Now I have continued the tradition with Henry who had this cake for his third birthday!
