Ingredients: Crust: 12 dble Graham crackers 1/4 c sugar 1 tsp cinnamon (optional) 1/4 c melted butter
Cheesecake: 2eggs 1/2 c sugar 1 lb. cream cheese 1 tsp vanilla
Topping: 1 16 oz sour cream 1/2 tsp vanilla 6 T sugar
Keto crust: 6 T Briana's Baking Mix or THM baking mix 3 T oat fiber 1 tsp THM Super Sweet Blend 1/4 tsp salt 1/4 tsp xanthan gum 5 T salted butter 2 T Greek yogurt (or sour cream)

Directions: |
Directions:Combine the crust ingredients. Cover bottom and sides of pan.
Cream sugar and cream cheese. Add eggs one a time. Pour into crust. Bake at 375* for 20 minutes. Let cool for 15 minutes. Turn oven to 475*.
Mix topping. Pour on top of pie. Bake at 475 for 6 minutes.
(For 13 x 9" pan, use the same crust, but for the filling use 3 eggs, 3/4 c sugar, 3-8oz cream cheese, and 1 1/2 tsp vanilla. )
FOR KETO version: I doubled the keto crust for 13 x 9" pan. Used 3/4 c Lakanto Monk Fruit Classic instead of sugar.
Let set in refrigerator 1-3 days (like that's going to happen!) |
