This recipe for Spinach Balls, by Elaine Dack, is from Seasoned with LOVE,

2 pkgs. chopped frozen spinach (cooked & drained) 2 1/2 c. croutons 2 medium onions, finely chopped 6 eggs, slightly beaten 3/4 c. melted butter 1/2 c. grated Parmesan cheese 1 T. garlic salt 1/2 t. dried crashed thyme 1 T. black pepper
Mix all ingredients and form into 1 1/2" balls. Place on a well-greased cookie sheet and freeze, then store in plastic bags. When ready to serve, bake at 350 degrees on greased sheet for 20-25 minutes.
