Peking Duck (kinda) Recipe

1 duck
2 Tbsp soy sauce
Some scallions
1 cucumber
Tortilla (street taco size) or Chinese pancakes
Hoisin sauce
Bag of new potatoes

Directions:
Directions:
Spatchcock the duck
Prick the skin all over like 100+ times
Rub with soy sauce and sprinkle with salt and pepper
In a roasting pan, put down a nice layer of halved new potatoes (or any veg) and S&P on those
Add a bit of water to cover the bottom of the pan – duck fat will start to drip and be yummy on taters
Put the duck on a rack above potatoes or directly on them
Put in 375F oven for 1 ½ - 2 hours. The skin will be wicked crispy and the duck nice and done.

Julienne 4” bits of scallion and cucumber
Get small “street taco” size tortillas – or proper Chinese pancakes or pillow type rolls
Hoisin sauce

Once all done, slice the breast off and cut across. Do the same for thigh meat. You can nosh the legs and wings.

Put some meat, skin, veg and hoisin in a pancake. Enjoy!!
