1/2 cup butter, softened
1 cup sugar
1 egg
1 Tbsp vanilla extract
1 1/3 cups all purpose flour
3/4 tsp baking powder
1/4 tsp salt

Preheat oven 350º F.

In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine dry ingredients; add to creamed mixture and mix well.

Drop by tsps 2" apart onto ungreased baking sheets. Chill for 30 mins. Bake for 12-15 mins or until edges are golden brown. Remove to wire racks to cool.

These buttery cookies bake up chewy and crispy at the same time. Sprinkle these vanilla wafers with colored sugar or leave them as is.
