I grew up eating my momma's peanut butter orange cookies. This recipe has been adapted to be a fasting friendly treat, but the subtle orange flavor surprise within a soft and chewy peanut butter cookie still takes me right back to my childhood!

1 c. natural peanut butter
⅔ c. cane sugar, plus extra for sprinkling
6 T. oat milk
2 t. vanilla extract
2 t. orange zest
1 c. flour
1 t. baking soda
½ tsp. sea salt

Directions:

Preheat oven to 350º

Line a baking sheet with parchment paper

Cream together peanut butter and sugar

Add in the milk, vanilla and zest and mix until combined

Whisk together the flour, baking soda and salt

Add dry ingredients to wet ingredients and mix until well incorporated

Roll into 1 ½ T. size balls

Arrange dough balls spaced adequately apart on prepared baking sheet

Gently flatten each dough ball with the back of a fork, making a crisscross pattern

Lightly sprinkle each cookie with sugar

Bake 12 minutes, or until slightly golden on edges

Let cool slightly before transferring to a wire rack to cool completely
