Prairie Hascap Berry Coffee Cake

Nontraditional sponge cake

2 eggs +1 egg yolk
1c white sugar
1tsp vanilla
1c all-purpose flour
1 tsp baking powder
⅔ c warm milk
2 tbsp butter

Directions:
Directions:
Whip eggs until frothy, graduality add sugar until it makes a creamy lemon colored foam add vanilla.
heat the milk add the butter to the warm milk allowing it to melt.
now add the flour and baking powder alternating with the warm milk mixture.
mix lightly and quickly, pour into a prepared 12 by 9 oven proof baking pan or 9-inch spring form. pop into a 325ºpre heated oven for 25 min. meanwhile prepare topping.

when the cake is finished baking remove it just long enough to pour on the topping.
increase the temp to 375º and pop it back in the oven for 5 min or until it is bubbling and golden brown. remove from the oven and allow to rest 15 min, serve warm.

This is an excellent coffee cake.
The basic cake recipe can be used to create other coffee cakes.
This recipe is considered to be a non-traditional sponge, because there is butter in the batter. and we all know everything is better with butter!
 

Prairie Hascap Berry Coffee Cake

Use Grandma's sponge Recipe
Add :
2c Hascap(Honey berries)
½ c brown sugar
1 tsp cinnamon

Crunchy Topping
1 c dark brown sugar
2 tbsp all-purpose flour
1 tsp cinnamon
½ melted butter



Directions:
Directions:
Mix together Berries, sugar and cinnamon and place in the bottom of a parchment lined and cooking oil sprayed 9 in. spring form pan.
Pour Sponge Cake batter, over this mixture, pop into 350ºpreheated oven.
bake for 25 min.
use this time to make Crunchy Topping.

Crunchy Topping
Mix brown sugar flour and cinnamon together in a medium bowl, add melted butter and toss lightly allowing small clumps to remain.

Test cake with a clean finger to be sure it is ready after 25 min. The finger test should leave a slight imprint. it needs to be almost baked, in order to hold the topping but soft enough to allow it to adhere to the Crunchy topping, allow to bake another 10 min.
Turn the oven off, but allow the cake to remain in the warm oven for 5 min before removing to a cooling rack, allow to cool another 10 min before removing the spring form.
Serve warm alamode as seen in picture.

This is another one of those wonderful tried and true recipes passed down through generations that I have adopted, with a few new twists and turns it has been fun to create my own recipes.

Don't be concerned about the finger test, it is the only way to test the cake in these instants, if tested with a wooden testing stick it could cause the cake to fall!

Hascap Berries also known as (Honey Berries) Grow lucratively in the Prairies, even in the northern area, they are tough enough to survive our Prairie winters, and loaded with vitamins and antioxidants.
I have been harvesting these berries for 10 years in my own garden, they bear fruit early in the season, a welcome taste of spring after a long winter.
