Granny's Coconut Pie Recipe

1/2 c Sugar
5 T Flour
1/2 t salt
1/4 c milk
1 1/2 c scalded milk
3 eggs yolks
1 t vanilla
1 c coconut
1 T butter

Directions:
Directions:
Blend sugar, flour, salt with 1/4 c milk. Add scalded milk, stirring constantly. Cook until thick, approx 3 minutes. Remove pan from heat, temper in egg yolks. Put back on heat and cook 2 minutes longer. Remove from heat, add vanilla, coconut, and butter, stir well. Pour in baked 9" pie shell.

Meringue:

3 egg whites, add 1/2 t cream of tarter, beat on medium until soft peaks form. Gradually add 1/2 c of sugar, 1 T at a time while beating on high speed. Beat until still peaks form, tips stand straight.

Spread meringue over pie filling, to the edge to seal. Use a spoon to twirl and twist the meringue as you spread. Sprinkle with coconut and bake at 350º, for approximately 15 minutes until light brown.
