1 3/4 c. all purpose flour
1/3 c sugar
3 tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg
2 c. (2 med) cubed peeled pears
1/2 c low fat milk
3 Tbsp. oil
1 egg
Topping:
3 Tbsp. sugar
1 tsp finely grated lemon peel

Directions:
Directions:
Heat oven to 400º. Line 12 muffin cups w/paper baking cups and lightly spray with cooking spray.
Lightly spoon flour into measuring cup, level off. In large bowl, combine flour, 1/3 cup sugar, baking powder, salt and nutmeg: mix well. Add pears; toss to coat.
In a small bowl, combine milk, oil and egg, beat well. Add to dry ingredients: stir just until moistened. Do not overmix. Divide batter evenly among paper-lined muffin cups.
In a small bowl, combine topping ingredients; mix well. Sprinle over batter in cups.
Bake at 400º for 15-20 minutes or until toothpick inserted in center comes out clean and edges are golden brown. Serve warm.
