4 eggs
1 cup sour cream
1 cup cottage cheese
½ cup fresh grated Parmesan cheese
¼ cup flour
⅓ milk
¼ tsp salt
¾ grated Monterey Jack cheese
¼ c grated Asiago cheese

½ lb mushrooms, sliced
½ cup finely chopped onions
1 Tbsp butter

½ cup diced ham

Directions:
Directions:
In 1 Tbsp butter, saute mushrooms and onions until soft. Drain liquid completely, between paper towels until liquid is gone!! This is important!

Beat eggs well! Combine all ingredients including mushrooms and diced ham with eggs. Pour into a 10 inch, Pam sprayed, pie pan. Bake the quiche at 350º for 45-50 minutes or until lightly brown. Set 5 minutes before serving.

Serve with sour cream cream, fresh basil sauce. UMMM good. I sometimes leave the ham out then provide a bowl of the diced ham as their choice to put on top of the slice of quiche and sauce!

This is a great dish for a luncheon a, combined with a tossed salad and cinnamon rolls!
