1 c (2 sticks butter) softened
1¼ c firmly packed brown sugar
2 eggs
2 T molasses
1 t maple extract
1¼ c all-purpose flour
1 t baking soda
2½ c quick or old-fashioned rolled oats (I use old fashioned)
1 c coarsely chopped pecans
¾ c pecan halves

In a large bowl beat (on medium speed) butter and sugar until fluffy. Add eggs, molasses, and maple extract; beat well. Add flour and baking soda; mix well.Stir in oats and chopped pecans, mix well. Cover the dough and chill in the fridge for at least one hour. Preheat oven to 350º. Lightly grease cookie sheets, ( butter flavored PAM).
Shape dough into 1 inch balls and place 3 inches apart on cookie sheets. Press a half pecan in the center of each ball. Bake 10 to 12 minutes. Transfer to wire racks to cool.
