Ingredients: 2 boxes pound cake mix. (I use yellow/white cake mix) Almond Extract (not artificial flavoring) Red, green and yellow food coloring 1 large bag of chocolate chips 1- 18 oz jar Apricot jam or filling 1 tbsp Crisco 2- 15 1/2 x 10 x 1 1/2 inch pan

Directions:Make both boxes of cake, mix together following directions for mix on boxes. Separate batter in 3 equal amounts (about 2 1/2 cups) in 3 separate bowls. Return each bowl of batter into a clean mixing bowl and add 1-2 teaspoon of almond extract and one food coloring, mix well. Then grease (you can use Canola Oil spray) and flour a sheet of wax paper for each pan and place inside of pan. Pour batter into wax paper pan. Bake each cake 10 to 15 minutes. DO NOT BROWN. Cool at least 15 minutes in pan. Then remove.
Heat jam with 1 tsp. shortening, will liquify and spread on layers. Place layers on top of each other in one of the pans. (bottom layer has wax paper under cake). Put a piece of wax paper on top layer and put the second pan on top. Press down with equal pressure. Put heavy books on top of pan and put in fridge for at least a day. (I use a 10lb free weight)
Melt the chocolate with half teaspoon of shortening and spread on layers. Let settle and then cut and cookies. |
