1 stick (½ cup) butter
3 large, very ripe bananas
2 large eggs
1 tsp vanilla
2 cups all purpose flour
1 cup granulated sugar
1 tsp baking soda
½ tsp salt
½ tsp cinnamon

Directions:
Directions:
Preheat oven to 350º
Spray a loaf pan with non-stick cooking spray or grease with butter.
Soften butter until melted.
Add vanilla and eggs to bowl to the melted butter. Mix.
Mash bananas with fork and add to mixture. Mix gently.
In a second bowl, whisk together flour, sugar, baking soda, salt and cinnamon.
Add these dried ingredients to wet ingredients and mix until just combined.
Pour batter into prepared loaf pan and bake for 45-50 minutes until toothpick inserted in the center of the bread comes out clean.
