1 cup butter, softened
1 cup canola oil
1 cup sugar
1 cup confectioners' sugar
2 large eggs
2 teaspoons vanilla extract
4-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Directions:
Directions:
Preheat oven to 375°. In a large bowl, beat the butter and granulated sugar until light and fluffy, then add the confectioners sugar, and beat again. Add oil and mix well. Beat in eggs until well blended. Beat in vanilla.

Combine the flour, baking soda and cream of tartar; gradually add to creamed mixture.
Drop by small teaspoonfuls onto ungreased baking sheets. I use a melon baller. Bake until lightly browned, 8-10 minutes. Remove to wire racks to cool.

You can sprinkle the top of the cookies with sugar or sprinkles, if you prefer them to be sweeter. They are a melt-in-your-mouth, plain sugar cookie! Yumm.

You could add almond extract, for flavor, if desired. You could mix in chopped nuts or chocolate chips for variation.
