2 Cups gluten-free corn flour
2 Eggs
⅓ Cup maple syrup
¼ Cup extra virgin olive oil
½ Tsp. white vinegar (or lemon juice)
½ Tsp. baking soda
¼ Tsp. salt

Directions:
Directions:
Add eggs, maple syrup, olive oil, vinegar, and salt to a large mixing bowl and use a whisk to mix well. Add corn flour and baking soda and use a spoon to mix until a dough is formed. Scoop one heaping tablespoon of cookie dough into your hands and roll it into a ball, then place it on a parchment paper lined cookie sheet. Repeat with the rest of the dough. Use your fingers to press the cookie dough balls into a flat circle shape.
